Bismillah.. at 07.15, I came to the campus. Today we make croissant again, because yesterday we failed.
Ingredients ;
- Hard flour 500gr
- Fresh milk 550gr
- Yeast 10gr
- Sugar 25gr
- Salt 5gr
- Shortening 300gr
Mehtods ;
- Prepare all ingredients & tools
- Cut the shortening and make square(17 x 17)cm
- Pour all dry ingredients
- Add fresh milk
- Proofing one hour
- Lamination(26 x 26)
- Roll W x L(20 x 60)
- Make singlem, proofing 30 minutes
- Last make dough 110 x 20
- Cut 12,5 & 6,3
After that, we do general cleaning so our place clean & chill
